Grey Day Flapjacks | Recipe

Heyaaa,


Today was a pretty grey, rainy day. I'm really missing the sunshine, I regret moaning about it. I thought I'd do a little bit of baking just to cheer myself up. I decided to make flapjacks because I'd never made them properly before...but I loooove eating them.





First thing first, preheat your oven to 150c/300F/Gas Mark 2 and line a deepish baking tray

Melt 175g of butter in a pan. 


Add 175g of brown sugar and a decent blob of golden syrup into the melted butter and simmer until all the sugar is dissolved and you have a kind of buttery caramel thing. 


Stir in whatever spices you think will be nice. I put cinnamon in mine but I think they'd be really nice with ginger in too...


Then grate in the zest of one zesty lemon 


Weigh out 350g of porridge oats and then stir your sugary buttery mixture into it until it's all soaked up by the oats


Tip the mixture into your lined baking tray, pat it down with the back of a wooden spoon so that it's all tightly packed. Then pop it in the oven and bake for about 20-25 minutes. Bake it less if you want really gooey flapjacks or more if you want crispier ones


Cut them up into decent sized chunks and have it with a lovely cup of tea. Deeelish.
